On one hand, you can pop into any of those fast food franchises that are found all over the country. But what do you get? Young entrepreneur, Rolandrei Viktor “Zark” Varona, knew there was a middle ground. There had to be a restaurant that offered hamburgers that truly satisfied even the most gargantuan appetites, yet at prices that did not break the bank.
An unexpected opportunity presented itself when the former OFW discovered a vacant 20 sqm. commercial space on Taft Avenue eight years ago. The location held much potential, being within stone’s throw of educational institutions like De La Salle University and St. Scholastica’s College. The concentration of a young market in this area gave him the idea to put up a burger joint.
“We did a study and found out that during that time, walang casual dining burger joint,” Zark recalls. “So I filled the gap sa market, yung need sa market na I thinkmay potential mag scale up. Hindi naman ako nagkamali. Sinimulan ko yungZark’s. The location was good, sa may eskwelahan, bata yung market; they filled it up kaagad, kasi unheard of yung ganun at that time. Ngayon, marami rin namanggumaya, but it means that we’re doing something right. May market sa ganitongsegment, between kami ng fast food at high end. That’s the reason bakittinatangkilik kami ng mga tao, not necessarily just because sa sobrang sarap naburger, or not just the cheapest burger, but the right value for money.”

Though there are already branches in Pampanga and Bulacan, expansion in the North will involve a new store in Clark, then gradually going forward by the city. This is the pace that Zark himself prefers for the growth of all his company-owned branches.
Looking back, Zark muses about why the market has accepted his burgers. “I think it’s really the value for money,” he reiterates. “The principle is to be fair, not only with my suppliers, not only with my team members, but also with the customers. I don’t want to rip them off, ganun yung values ko. I give them the values sa ibabayad nila. And I think they appreciate naman what we serve to them.”
Having said that, Zark will definitely not rest on the success of his burger patties. He reiterates: “We will not stop there. Marami kaming programs ngayon, like people development, improving the food and the menu. I think it’s the right time for us to announce to everyone that we are here; we’re taking the Zark’s brand to the next level and we’re the number one casual dining burger joint…We have developed a system, built our own commissary, a strong and competent management team. Along with that, yes. We are opening our doors for franchising.”
